Roasted Chicken And Squash

Ingredients:

  • Delicata squash- 3 cut in halves
  • Celery- 3
  • Onion- 1 large
  • Garlic- 2
  • Thyme- 1 bunch
  • Olive oil- 2 tsp
  • Kosher salt and pepper
  • Whole chicken- 2
  • Lemons- 2

Recipe

Set the oven at 425 degrees F.  Meanwhile cut the veggies and roast them in pan with olive oil and season with spices

Add 2 tsps of black pepper and 5 teaspoons salt on the chicken. Rub the spice inside out of the chicken and fill the cavities with lemon and herbs. Place the tied chicken on the seasoned squash.

Place in the oven and bake for 1 hour. Arrange the platter once the chicken is roasted and serve hot.

Sweet Squash With Cranberries

You can also make it sweet and creamy, here’s the recipe:

Ingredients:

  • Olive oil- 1 tbsp
  • Butternut Squash- 1 cut in rounds
  • Salt and pepper
  • Cranberries- 2 cup fresh
  • Maple syrup- half cup
  • Orange juice- 2 tbsp
  • Fresh rosemary- 2 tbsp
  • Goat cheese- 4 ounce
  • Heavy cream- quarter cup
  • Pepitas- 1/3 cup roasted and seasoned with salt

Recipe

Put the oven at 425 degree F. Arrange the squash rounds in a baking sheet greased with olive oil. Sprinkle salt and pepper and roast in the oven until squash rounds turn golden

Take a saucepan and add orange juice, maple syrup, rosemary, and cranberries to the pan. Cook until berries pop. Add goat cheese and cream in a separate bowl. Put salt and pepper as per taste.

Place the roasted squash on the plate, add cranberry mix on the top with pepitas and cheese. Enjoy!!!

Hot Winter Squash Soup

Ingredients:

  • Unsalted butter- 2 tbsp
  • Olive oil- 1 tbsp
  • Onions
  • Butternut squash
  • Chicken stock -3 cup
  • Pumpkin puree- 1 can
  • Croutons
  • Salt and pepper

Recipe

Heat the butter and oil. Cook onions in the pan for few minutes or until it turns soft and translucent

Put the rest of ingredients in the saucepan and cook on medium heat until the squash turns tender. Remove from the stove and blend in a processor. Garnish with croutons and enjoy hot.
